  • 1 can (5 oz) tuna in olive oil, drained

How to Make Stuffed Tomatoes with Tuna

INSTRUCTIONS :

  1. Prepare the tomatoes: Slice off the tops of the tomatoes and carefully scoop out the seeds and pulp with a spoon. Set aside the hollowed-out tomatoes.
  2. Make the tuna filling: In a medium bowl, combine the drained tuna, chopped red onion, mayonnaise (or Greek yogurt), Dijon mustard, parsley, oregano, salt, and pepper. Mix until well combined.
  3. Stuff the tomatoes: Spoon the tuna mixture into the hollowed-out tomatoes, filling them generously.
  4. Top with cheese (optional): If desired, sprinkle a little shredded mozzarella cheese on top of each stuffed tomato for an added layer of flavor.
