Smothered Chicken

Ingredients :

For the Smothered Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp all-purpose flour

For the Gravy:

  • 2 tbsp olive oil or butter
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme or Italian seasoning

Optional Garnish:

  • Fresh parsley, chopped

Instructions :

1. Season and Coat the Chicken

  • Season chicken breasts with salt, pepper, and paprika. Lightly dust with flour, shaking off excess.

2. Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown. Remove and set aside.

3. Prepare the Gravy

  • In the same skillet, add onions and sauté until softened, about 3 minutes. Add garlic and cook for another minute.
  • Stir in chicken broth, scraping up any browned bits from the bottom of the skillet. Add cream, Worcestershire sauce, and thyme. Simmer for 2-3 minutes.

4. Smother the Chicken

  • Return the chicken to the skillet, spooning gravy over the top. Cover and simmer for 10-12 minutes, or until the chicken is fully cooked (internal temperature of 165°F).

5. Serve and Garnish

  • Serve hot with a side of mashed potatoes, rice, or your favorite vegetables. Garnish with fresh parsley.
